Quick Vegetable Chow Mein

I am always looking for new Chinese and Asian inspired dishes to create at home. Chinese take-out can be very expensive so I am always trying to find a cheaper way to satisfy my craving. This quick and easy vegetable chow mein hits the spot every time!

1 small head Napa cabbage; shredded
1 cup carrots; shredded
5 scallions; thinly sliced
2 cups bean sprouts
1 package Chow Mein noddles
1/4 cup vegetable or canola oil
1/3 cup low-sodium soy sauce
1/8 cup toasted sesame oil; more to taste 

1/4 cup rice wine vinegar

Fill a medium stock pot with water and bring to a boil. While you are waiting for the water to boil, start to prep the vegetables and heat the oil in a large skillet over medium-high heat.

In a small bowl combine the soy sauce, sesame oil, and rice wine vinegar. Whisk until combined and set aside.

Once the water has boiled cook the chow mein noodles for two minutes, drain and rinse with cold water. While the noodles are cooking, saute the cabbage, carrots, and scallions in the oil for about 3-4 minutes. Add the noodles and sauce mixture to the vegetables. Cook for another 2-3 minutes. Stir in the bean sprouts and serve. Enjoy!

Note: You can purchase a packet of Lo Mein sauce at your local grocery store if you would like to, instead of making your own sauce.
