Baked Chicken Flautas

Love ordering chicken flautas at your favorite Mexican restaurant? Well now you can make them at home without the greasy mess and guilty feeling after eating them. These chicken flautas are packed with tons of vegetables and delicious flavors. What makes them even better is they are baked in the oven, not fried! Great for a quick, healthy lunch or busy school night dinner. 

Saute the red peppers, shallots, and garlic in a skillet until softened.

Place all the ingredients in a large bowl and stir to combine. It can't get much easier then that!

Place 1/3 cup of the mixture in the center of the tortilla. Make sure not to add to much of the filling, otherwise it will fall out of the sides and you will not be able to roll the flauta tightly.

Bake at 425 degrees until golden brown.

2 cups shredded or cubed cooked chicken
1 14 oz. can black beans, drained and rinsed
1 cup frozen corn, thawed
1/2 cup red bell pepper, diced
1 large shallot, finely diced
1 large garlic clove, finely mined
1 tbs. extra-virgin olive oil
1/2 cup salsa, use your favorite kind
1/4 cup low-fat sour cream or Greek yogurt
1 cup Monterey Jack Cheese, shredded
1/4 cup fresh parsley, finely chopped
1 tbs. Taco Seasoning
Kosher salt and freshly ground black pepper, to taste
10-12 medium-sized flour tortillas
Cooking Spray

Preheat the oven to 425 degrees and line a baking sheet with parchment paper.

In a medium-sized skillet, heat the olive oil over medium-high heat. Saute the red peppers, shallots, and garlic until soft, about 5 minutes. 

While the peppers are cooking, in a large bowl, combine all the ingredients except the tortillas and cooking spray. Add the red peppers, shallots, and garlic when the mixture is finished cooking. Stir to combine once more.

Place 1/3 cup of the filling mixture in the center of the tortilla. Make sure not to over stuff the tortillas, otherwise they will be difficult to roll. Tightly roll the flautas up and place seam side down on the baking sheet. Repeat until the filling mixture is all gone. Once all the flautas are made, spray the tops lightly with cooking spray, this will make the flautas nice and crispy. Place in the oven and bake 15-20 minutes or until the flautas are golden brown and crispy.

Serve with salsa, sour cream, and guacamole. Enjoy!
